Sometimes a cup of coffee just won’t cut it – thank goodness for Coffee Sour Cream Cake! This is the perfect combination of cake and a strong coffee hit.
Ingredients
125g butter or margarine
1 cup sugar
3 eggs
1 tbsp rich instant coffee granules
1 tsp vanilla essence
1 tbsp hot water
190g self raising flour
95g sour cream
Icing
2 tsp rich instant coffee granules
1 tbsp hot water
1 cup icing sugar
20g melted butter or margarine
Directions
Preheat oven to 170°
In a bowl, cream butter and sugar. Add 3 eggs one at a time, mixing well each time.
In a small bowl, add the coffee granules and vanilla essence. Add the hot water and stir to dissolve.
Pour into mixture. Mix well.
Fold in flour and sour cream.
Spoon into a 20cm lined and greased tin, smoothing the top.
Bake at 170° for 40 mins .
Cool on rack.
To make the icing: Dissolve the coffee granules in hot water. Add icing sugar and melted butter. Mix until smooth.
Spread over cooled cake and enjoy!
