Almond Cupcakes
Mmmmm…. these Almond Cupcakes are soft, moist and delicious! A refreshing change to vanilla, they’re super easy to make and definitely more-ish!
Makes 24 cupcakes.
Ingredients:
- 170g butter
- 1 1/2 cups sugar
- 2 eggs
- 1 1/4 cups milk
- 1 1/2 tsp almond essence
- 1/4 tsp vanilla essence
- 2 1/2 cups flour
- 2 1/2 tsp baking powder
- Pinch of salt
Icing:
- 1/2 cup icing sugar
- 1/8 tsp almond essence
- 2 1/2 tsp milk (approx)
Directions:
- Preheat oven to 170°.
- Cream butter and sugar until pale and creamy. Beat in eggs. Add milk, almond essence and vanilla essence. Mix well.
- Add flour, baking powder and salt. Fold gently.
- Spoon into paper cases.
- Bake for 15 mins, or until cakes spring back in the centre when lightly touched
For the icing:
- Mix together the is icing sugar, almond essence and milk until smooth. (Add just enough milk to make the right consistency).
- Drizzle over cold cakes.
